The science behind this:
Because pepper flakes are so light, and hydrophobic, the surface tension keeps them floating on top. The next question to think about is why the pepper shoots to the sides when soap touches the water. Soap is able to break down the surface tension of water—that is why soap is such a good cleaner.Apr 1, 2020
Elimination of the surface tension of water would lead to changes in the behavior of water and some of these changes relate to the disadvantages of surface tension. One example close to home is washing clothes. Because water has a relatively high surface tension, detergent is needed when washing clothes. Part of the job of laundry detergent is to reduce the surface tension of water and this allows the laundry water to fully penetrate into the clothes and improve cleaning. If water had a naturally low surface tension, then much less detergent would be needed to wash clothes.
Vocabulary:
Hydrophobic- "water fearing"- not attracted to water. Oily things, like salad oil or butter, are hydrophobic
Hydrophilic- "water loving"- attracted to water. Paper or salt are hydrophilic
Surface tension- the pulling force with which water molecules attract each other on a surface
Polar- Has a positive(+) end and negative(-) end. Water molecules are polar.
